This process works with both vacuum bagging and with vacuum infusion to keep the resin content low while also insuring proper filling. You wrap the layup with peelply, breather material and finally plastic. Your vacuum is set up through ports in the plastic. I usually use the cheap wet vacs that Lowe’s carries. They are a small power head that you stick on a five gallon drum. They are cheap enough to be considered disposable. Cut a couple of small holes in the tube to prevent the motor burning out. I keep a couple of spare ones handy in case one of the ones you are using burns out or gets clogged by resin. I usually use one shop vac per 5 feet of mast. You still should rotate the assembly every 15-30 minutes, maybe 45 degrees at a time, along with the vacuum bagging this prevents sag and heavy resin areas.

Garage sales are another great source for cheap shop vacs for vacuum bagging.
